"Pot" is an abbreviation for "Potentiometer", a rotary device which varies the resistance in a circuit. By measuring the resistance the device returns a value for the pot. Your favourite PC flight simulator combines the values of two pots "X" and "Y", and thereby calculates the position of your joytick.
